A contact's Email Opt-in field has changed to Opted out (contact). Why?

This happens when a contact unsubscribes from your marketing emails.
When you send an email campaign or a double opt-in confirmation email to a contact, and they click the Unsubscribe link in the email, then the Email Opt-in field in the contact record changes to Opted out (contact).
